
2 squares of semisweet chocolate
3 eggs
2 c. sugar
1 c. Vegetable oil
2c. grated zucchini
1 tsp. Vanilla extract
2c. All purpose flour
1tsp. Baking soda, salt, cinnamon
1 c. milk chocolate chips
Melt semisweet chocolate and mix all ingredients except chocolate chips.
Fold in chocolate chips last
Bake in 9x5 loaf pan at 350
Bake for one hour
Makes 2 loaves
I have actually made this recipe before, but it is so yummy that I had to share it. This recipe comes from a friend (thanks Nicole) and it is really easy to make. Plus it is a great way to use up that zucchini in your garden. I would love to say this is healthy because it has zucchini in it, but with all of the delicious chocolate, its hard to justify. Still as a treat, I think it has some nutritional value. I have most of these ingredients on hand so that makes it pretty cheap and even easier to make. I am going to give this recipe three stars, because I just can't give it that last star for being healthy.

Sounds great, I've heard of using beetroot in chocolate cakes but not courgette's, think I shall have to give this a try, thanks for sharing.
