Recipe 42: Homemade Honey Butter

Ingredients

1 pound homemade butter
1/4 cups honey
1/2 teaspoon ground cinnamon
1/2 teaspoon vanilla extract

Directions

Cut the butter into chunks using a dough scraper.
Place butter into a mixer's work bowl and beat at low speed, using the whisk attachment to loosen the butter. Increase the speed to medium and add the honey, cinnamon, and vanilla extract and beat until well combined, about 5 to 7 minutes. Remove butter from bowl and spoon onto parchment paper or plastic wrap. Roll into a log and refrigerate for 2 hours.

This recipe was a hit! I used my homemade butter recipe from recipe 25 and added these extra ingredients. I also made the whole wheat bread from recipe 38. It was so delicious and the whole family loved it. It is also pretty easy to make but you have to have some patience. We had a ton of heavy cream leftover from Thanksgiving and so it was a great way to use up ingredients that would otherwise go bad. I also think this counts as being healthy because butter is so much better for you than margarine.
